They say all roads lead to Rome. But in the case of the Bellini, this well-traveled cocktail is an icon of the majestic city of Venice. Invented in the late 1940s by a certain Giuseppe Cipriani, the then-director of the prestigious Harry’s Bar, it is made with prosecco and peach nectar, preferably from the white variety. It’s pink-orange color lends it a glorious sensuality… and supposedly inspired its name, in homage to renowned Venetian painter Giovanni Bellini, who was particularly fond of these shades. Some 70 years later, the Bellini is still just as popular, and often revisited with champagne and raspberry purée… So, grazie who? Grazie Giuseppe!
